Mac & Cheese
Macaroni and cheese is one meal my whole family loves that is cheap and very easy to make. My mom use to make this a lot because it fed a lot of people, it was delicious and it was cheap and easy to make. We had eleven kids in my family so my mom had to be very frugal about what she cooked to feed so many. Yet, I love the stuff and make it the same way my mom did with the following ingredients:
2 cups macaroni
1 can diced tomatoes
cheese
salt
pepper
margarine
Boil your macaroni until it's almost cooked then drain. Add a bit of margarine, salt, pepper and tomatoes.
Separate the macaroni into two portions. Place half the macaroni in a small roaster and cover with a layer of sliced or shredded cheese, the place the next layer of macaroni on top of the first layer and cover the second layer with cheese. Put into the over at 350 degrees for 1 hour. Let cool and serve with a salad. Serves at least four people.
Pancakes
Pancakes is a breakfast food that I grew up eating regularly. Since I came from a family of eleven children, I being fourth in line from the top, we were given pancakes or oatmeal every morning before school with a choice of molasses, corn syrup, maple syrup, or sugar as a topping. I was a breakfast food that was easy to make, cheap on the budget, great with any kind of topping and by doubling the recipe it can feed a lot of people. This recipe can also be found in the "Red Rose Cook Book" if you would like a variety of pancakes.
This is the basic recipe:
Sift together:
1 ½ cups all purpose flour
1-2 tablespoons sugar
3 teaspoons baking powder
½ teaspoon salt
Combine
1 egg, beaten
1¾ cups milk
2 tablespoons vegetable oil or melted shortening
Assemble ingredients and utensils. Preheat griddle or heavy frypan. Blend or sift dry ingredients together. Beat together egg, milk, and liquid shortening.
Blend liquid into dry ingredients and beat until almost smooth.
Allowing about ¼ cup batter for each pancake, pour on preheated pan. Turn when bubbles break on surface. Brown other side. Serve hot, with butter and choice of topping. Makes about 12 (4-inch) pancakes.
Note: If batter thickens, add more milk.
